Impossible Foods is looking for a motivated, mission-aligned person to join the Materials & Texture team. The overarching goal of the group is to create an arsenal of plant-based materials that enable the re-creation of any animal-based food products. We are looking for people who can contribute highly developed experimentalist skills, analytical thinking, and creative ideation to help us make daily progress towards that goal.
As a Senior Research Associate, she/he will be expected to spend most of their time as an experimentalist, performing hands-on experiments at the lab bench and the pilot plant. Good organization and data recording skills are as essential for this position, as curiosity and self-starting. She/he will be working closely with a scientist/manager on the team who would serve as her/his scientific & career mentor. The manager will take the lead in defining high-level research directions, and rely on the hired candidate for conducting the experiments and analyze the data. At the same time, this role is expected to take an active part in discussing hypotheses and texture related theory from the literature. We take professional development in the group seriously and aim for them to eventually develop into fully independent scientists in the science career track.

You Will:

  • Support the development of plant-based materials mimicking the specific structure of animal tissue, and use them to create food prototypes with the target texture.
  • Conduct experiments for biopolymer mixing, spinning, and tissue assembly.
  • Characterize materials using a wide array of techniques including mechanical testing/ texture analysis, rheology, microscopy.
  • Performed statistical analysis on the results to draw conclusions.
  • Establish the structure-process-property relationships of plant-based meat to optimize the texture and sensory of prototypes.
  • Write detailed experimental records, maintain an electronic lab notebook, and present findings to team members.
  • Support pilot trials following GMP onsite.

You Have:

  • MSc. or BSc. in Material Science/Engineering, Fiber Science/Engineering, Chemistry, Food Science, Textile, Engineering, Chemical Engineering or related fields.
  • 1 to 2 years of experimental research experience with biomaterials or food.
  • Experience with materials testing/texture analysis.
  • Good verbal and written communication skills.
  • Experience with G Suite.
  • Solid understanding of statistical methods.
  • Experience with fiber spinning is a plus.
  • Knowledge of JMP is a plus.
