Job Description

Impossible Foods is addressing the most catastrophic threats facing humanity: climate change and biodiversity collapse. A global transition to a plant-based food system will turn back the clock on atmospheric CO2 levels, restore natural ecosystems and reverse meltdown in wildlife biomass.
The easiest -- if not only -- way to make our civilization sustainable is to eliminate livestock, the most dangerous technology on Earth. But humans won’t give up meat. So we need to make meat better -- more delicious and more nutritious, without animals as the underlying production technology. That means that making meat sustainably is the most important and urgent problem for the global scientific community.
Impossible Foods' mission is to completely replace the use of animals as a food-production technology by offering consumers everything they currently value about animal products -- and making products that are vastly superior to their animal analogues.
To do this, we are taking a revolutionary scientific and market-based approach. We are inventing efficient, sustainable ways to transform ingredients from plants into meat, fish and dairy foods that deliver all the pleasures and nutritional benefits consumers demand, without the destructive environmental or public health impact.
Our world-class R&D team has been building the know-how and technology platform to produce meat, fish and dairy foods from plants. In order to advance our mission, Impossible Foods will continue developing a comprehensive and well-characterized toolkit of biopolymers that enable our creation of delicious animal products from plants. You will isolate, process and - in particular - characterize protein from biological sources as part of IF’s larger mission to create the structures we target to meet our mission.

You Will:

  • Lead: define, discuss, critically evaluate and revise conceptual questions for this effort.
  • Help define targeted “food activities” that we need proteins to deliver.
  • Identify proteins that can create targeted structures or activities.
  • Establish systems to characterize protein activities and mechanisms.
  • Collaborate broadly and rapidly in response to new information, particularly with others in the Biopolymers group.
  • Aggregate, contextualize and summarize data. We are deeply committed to transparency, accessibility, accurate communication and the proper deployment of caveats.
  • Invent. Impossible Foods has built a new arena for its ingredients and products that your discoveries will support.

You Have:

  • PhD in protein biochemistry, biophysics or related fields.
  • A deep interest in understanding biophysical and biochemical mechanisms underlying textural transitions and other food activities by proteins, as well as the general principles that drive them.
  • A drive to push into new and exciting intellectual areas while synthesizing and revising models.
  • Relatedly, the ability to keep our mission top-of-mind while zooming into and back out of details and reshuffling priorities as we learn.
  • The aim to communicate clearly and to continually improve the visual display of quantitative information.
  • Perseverance. Our work is meaningful, highly innovative and fascinating - but not always straightforward.
  • Ability to wrangle, interpret and communicate data from previous work, our team and existing literature.
