This Scientist position is a critical role in the Heme Product Quality group at Impossible Foods which sits within the R&D Downstream Isolation team. In this role, you will collaborate with other heme teams such as Strain Development, Fermentation, Engineering and Analytics as well as the end user Product teams. You will evaluate the quality and shelf life of our heme ingredient using various analytical, physicochemical and microbiological testing methods. You will develop work schedules and design the experiments to test the product. You will also analyze and present the data and write technical reports. You will assist with optimizing scaling, and validating our heme manufacturing process and identifying innovative approaches for improving the quality and extending the shelf life of the heme product. You will work with corporate Quality to support root cause analysis on any out of spec heme product. You are someone who loves science and is passionate about making a big impact and creating products to change the world. 

You Will:

  • Work with other teams to evaluate the quality and shelf life of heme and validate the product/process.
  • Coordinate shelf life and stability testing: sensory, analytical, physicochemical & microbial, including data analysis and reporting, for multiple different projects/products.
  • Design and conduct experiments to improve heme shelf life.
  • Optimize shelf life testing methods.
  • Must demonstrate excellent record keeping/documentation skills, attention to detail and accountability.
  • Develop SOPs and follow established procedures.
  • Maintain a clean, sanitary, organized and safe workplace.
  • Voice ideas, concerns and solutions to teammates.
  • Participate in internal sensory panels.
  • Perform other tasks as assigned. 

You Have:

  • BS in Biochemistry, Microbiology, Food Science or a similar field plus 6+ years of experience in industry or academic experience (MS/PhD).
  • Experience with stability testing, ideally using colorimetry, sensory and microbial testing.
  • Must have project management skills and be able to lead multiple tasks concurrently with high attention to detail.
  • Ability to document work, analyze data, and generate timely and accurate reports.
  • Self-motivated with good interpersonal skills.
  • The ability to be flexible to changing priorities in a fast paced work environment.
  • Comfortable designing experiments and testing hypothesis.
  • Knowledge of protein biochemistry and experience working with protein solutions is a plus.
  • General background in microbiology is a plus.
  • Experience with statistical softwares and data analysis procedures is a plus.
  • Taste samples that contain meat, soy & wheat.
